Guilt Free Snacks and Desserts

Starting to feel like a walking vegetable garden? Is extra virgin Olive oil and cold pressed organic flax seed oil oozing out of the pores of your skin? Are you having dreams of yourself lifting weights and doing push ups, and climbing steep mountains? The let's take a break and see what sort of goodies you may be able to eat without driving your blood glucose level up over 300. Try these on for size.

  • A cup of sugar free hot chocolate with cinnamon sprinkled on top. Heck, go for broke and add a tablespoon of sugar free whipped topping
  • Bowl of sugar free pudding layered with sugar free whipped topping, and cinnamon
  • A bowl of melon salad (ALL melons are good for you) Cut up cantaloupe and honey dew melon into chunks, sprinkle with chopped mint leaves, and perhaps some heavy cream whipped, stir together and enjoy
  • Lite yougurt sprinkled with cinnamon
Hey, I know it isn't the same as a Jim Dandy at Friendly's ice cream or  a double fudge chocolate cake topped with Haagen Dazs ice cream and hot fudge, but it isn't bad and it is a lot healthier for you in the long run.

OH, I forgot, now go out and run two miles and do 100 push ups. Only kidding, but I have a sense of humor too. Everyone needs to let go once in a while for their sanity. Just remember Type 2 diabetes is very serious business and you have to discipline yourself. It's NOT easy, but it is simple.

Diabetic Desserts

Unless you are a very special hard driving military disciplined sort of person, you are going to get a craving now and then for something sweet. The way to solve it is to have on hand ingredients to make a desert that will NOT drive your blood sugar out of sight.

Here is one, compliments of "A free Guide To Living Well With Diabetes" on display at most Rite Aid Drgustores:

Pumpkins Pie Bites:

  • Butter flavored cooking spray (Pam)
  • 3/4 cups whole grain crunchy, low sugar cereal (like Kashi's whole grain nuggets)
  • 2 Tbsp maple syrup
  • 1/4 tsp ground cinnamon
  • 8 Egg whites
  • 1 / 15OZ can solid pumpkin puree
  • 3/4 cup agave nectar (found in most super markets) / WATCH for NO high fructose corn syrup
  • 2 Tbsp whole wheat pastry flour
  • 2 1/2 tsp pur vanilla extract
  • 1 1/4 Tbsp pumpkins pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Finely grind cereal in a food processor. Transfer to a small mixing bowl, stir in syrup and cinnamon. Spoon into prepared baking dish; spread evenly across bottom. bake for 7 to 9 Min's or until slightly browned.

Meanwhile, in a large mixing bowl, lightly beat the egg whites until they bubble very slightly. Fold in pumpkin, agave nectar, and flour until well combined. Stir in vanilla, pie spice, baking powder and salt and continue mixing to well combined. Pour into baked crust, spreading in an even layer with a spatula. Bake for 40-45 Min's until a toothpick inserted in center comes out almost clean. Cool on wire rack. (SERVES 32) Cut 3 times across the width and 7 times along the length, Top each bit with a teaspoon  whipped topping if desired.

Nutrition per bite:

94 calories, trace of fat, trace saturated fat, 0 mg cholesterol, 102mg sodium, 21 grams of carbohydrates, 15 grams sugar, 2 grams of fiber and 3grams of protein.

TO END UP WITH LESS sugar per bite, cut maple syrup in 1/2 and use some Stevia.

This is a guide line, get creative on your own.

DON'T EAT THE WHOLE PAN OF 32 BITES YOURSELF.
