Celery contains active compounds known as phthalides. These compounds provide healthy benefits by RELAXING the muscles in and around the walls of the arteries which cause those vessels to dilate, thus creating more space inside the arteries and permitting the blood to flow at a lower pressure.
Phthalides also apparently lower stress hormones which in turn lowers blood pressure. Celery contains high amounts of magnesium, calcium and potassium. These minerals calm the nervous system by automatically counterbalancing stress levels.
History of celery juice?
Although Hippocrates, the famous (Greek physician considered the "Father of Medicine", c. 460 BC- c. 377 BC) apparently prescribed the juice of this leafy-topped stalk to patients suffering from nervous tension and although Chinese medicine has long recognized celery juice to lower high blood pressure, the Western World has only recently began to study it.
The University of Chicago Medical Center (UCMC) is credited with the first studies of celery's effects on blood pressure. It is indicated that the father of one scientist at UCMC experienced a drop in his BP from 158/96 to 118/82 in just one week after eating 4 talks a day.
